Three Pepper Pasta Salad

Ingredients

(12 ounce) tricolor spiral pasta

small red bell pepper, diced

small yellow bell pepper, diced
|
|
1 |
|
small orange bell pepper, diced
|
|
1 |
can |
(2 1/4 ounce) sliced black olives, drained
|
|
8 |
ounces |
fresh mozzarella, cubed
|
|
|
Dressing: |
1/2 |
cup |
extra virgin olive oil
|
|
3 |
Tablespoons |
red wine vinegar
|
|
1/4 |
cup |
fresh basil, minced
|
|
1/4 |
cup |
fresh parsley, minced
|
|
1/4 |
teaspoon |
salt
|
|
1/4 |
teaspoon |
freshly ground black pepper
|
|
1/2 |
teaspoon |
crushed red pepper, optional
|
|
Directions:
Cook pasta according to package directions, drain, rinse with cold water and place in a large serving bowl.
Add the bell peppers, olives and mozzarella cheese.
Dressing:
In a blender, add the oil, vinegar, basil, parsley, salt, pepper and crushed red pepper (optional); cover and process until blended.
Drizzle the pasta with the dressing and toss to coat. May be served at room temperature or covered and refrigerated up to one day in advance.
