Indian Spiced Rice

Ingredients

crushed coriander seeds

cinnamon stick

powdered ginger

bay leaves

basmati rice

Directions:
Using a colander, wash rice by rinsing in cold water. Then soak in cold water for about 30 minutes. Drain.
In a large saute pan or Dutch oven, warm 1 tablespoon of oil over medium heat. Add onion and garlic and cook until tender. Add coriander, cinnamon, cloves, ginger and bay leaves and allow to saute for another minute.
Add rice to pan and cook until rice is translucent and just starts to brown. Add water and bring rice to a boil. Partly cover pan with lid and reduce heat to simmer. Cook rice for another 10 to 15 minutes or until the water has evaporated.
If using a rice cooker:
Rinse rice in a colander with cold water. In a saute pan, cook onion and garlic until tender. Add spices and cook for another minute. Place all ingredients in the rice cooker and turn on rice cooking setting.
