Flaky Pastry Pie Crust
Yield: 2 pie crusts
Ingredients

flour

teaspoons |
Kosher salt

teaspoon |
baking soda
|
|
1/2 |
cup |
vegetable shortening, cold
|
|
1/4 |
pound |
cold unsalted butter, diced
|
|
1/2 to 2/3 |
cup |
ice water
|
|
Directions:
Mix the flour, salt, and baking powder in medium-sized mixing bowl.
Add the shortening and butter and cut with a pastry cutter or two forks until mixture becomes pea-sized bits.
Slowly, drizzle in the ice water and combine the mixture with a spatula or wooden spoon. Add only enough water to moisten the dough and have it just come together in large clumps.
Dump the dough out onto a floured board and knead quickly into a ball.
Wrap the dough in plastic and allow it to rest in the refrigerator for at least 30 minutes before using.
