Hearty Vegetable Beef Barley Soup

Ingredients

boneless sirloin beef steak

large onion, chopped

garlic, minced

beef broth (about 56 oz.)

(14 1/2 oz.) no salt added diced tomatoes, undrained
|

sliced carrots
|

1/2 |

sliced celery

dried basil, crushed

black pepper

bay leaf
|
|

pearled barley

(10 oz.) frozen whole kernel corn

Directions:
In an 8-quart Dutch oven brown meat. Add onion and garlic; cook until onion is tender. Drain.
Add broth, tomatoes, carrots, celery, basil, pepper and bay leaf. Sort and rinse barley and add to pot. Cover; bring to a boil. Reduce heat; simmer 50 to 60 minutes, stirring occasionally.
Add corn. Increase to medium heat and let warm another 10 minutes.
Additional water may be added if soup becomes too thick upon standing.
