White Bean Salad with Tomato and Avocado

Ingredients

2 tablespoons Wild Harvest Organic Extra Virgin Olive Oil

1 tablespoon fresh squeezed lime juice

1 teaspoon Wild Harvest Organic Ground Cumin

1 teaspoon chili powder

1 can (15 ounce) organic cannellini beans, rinsed and drained

1 cup Wild Harvest Organic Grape Tomatoes, halved

1 ripe avocado pitted, peeled and chopped

1/4 cup diced red onion

1 package (0.75 ounce) Wild Harvest Organic Fresh Cilantro, chopped

1/4 cup crumbled queso fresco cheese, optional

Add To

Directions:

In large bowl, combine oil, lime juice, cumin and chili powder.

Stir in beans, tomatoes, avocado, onion and cilantro; salt and pepper to taste.

Stir in cheese, if desired.
