Veggie Pasta Salad

Ingredients

1 package (12 ounce) Essential Everyday Tri-color Rotini

1 can (14 ounce) Essential Everyday Quartered Artichoke Hearts, drained

1 can (6 ounce) Essential Everyday Small Pitted Ripe Olives

1 pint grape tomatoes, halved

1 medium cucumber seeded and chopped

1 cup chopped red onion

1/2 red bell pepper, chopped

1/2 yellow bell pepper, chopped

3/4 cup Essential Everyday Italian Dressing

Directions:

Prepare pasta according to package directions; rinse with cold water and drain.

In large bowl, combine cooled pasta, artichoke hearts, olives, tomatoes, cucumbers, onion and peppers; toss with dressing.

Refrigerate, covered, several hours or overnight.
