Spicy Black Bean and Chorizo Nachos

Ingredients

8 ounces bulk chorizo sausage

1/2 cup chopped onion

1/2 cup chopped poblano pepper

1/2 cup chopped red bell pepper

1 fresh jalapeno pepper, sliced

1 can (15 ounce) Essential Everyday Seasoned Black Beans, slightly drained

1 package Essential Everyday Yellow Corn Round Tortilla Chips

1 jar Monterey Jack salsa con queso, warmed

3 cups Essential Everyday Shredded Monterey Jack Cheese

chopped tomatoes

chopped fresh cilantro

Directions:

In large skillet over medium-high heat, combine sausage, onion and peppers; cook and crumbled until sausage is no longer pink and crispy browned. Drain off grease. Stir in beans; cook until heated through.

Place chips on two large baking sheets. Top with con queso, bean mixture and shredded cheese.

Bake in a preheated 400 degree F oven until cheese is melted and bubbly (about 10 minutes). Garnish with tomatoes and cilantro.
