Black Bean and Corn Guacamole

ripe avocados pitted, peeled and diced

(15 ounce) Essential Everyday Black Beans, rinsed and drained
|
|
|

(10 ounce) Essential Everyday Diced Tomatoes with Green Chiles, Lime Juice and Cilantro, drained

Essential Everyday Frozen Super Sweet Corn, thawed and drained
|
|
|

fresh squeezed lime juice
|
|
|
| 1/2 |
teaspoon |
minced garlic
|
|
|
Directions:
In large mixing bowl, combine all ingredients; salt and pepper to taste.
Mash to desired consistency.
Serve immediately or refrigerate, covered with plastic wrap directly in contact with guacamole, up to 1 hour ahead.
