Quick and Easy Corned Beef Hash

Ingredients

2 tablespoons Essential Everyday Pure Vegetable Oil

1/2 cup chopped onion

1/2 cup chopped red bell pepper

1/2 cup chopped green bell pepper

1 pound Essential Everyday Frozen Potato Rounds

2 cups cooked and chopped corned beef

Eggs, optional

Add To

Directions:

In large skillet, heat oil over medium heat. Add onions and peppers; salt and pepper to taste. Saute until onions are softened (about 3-5 minutes).

Add in potato rounds and corned beef. Saute, slightly breaking up potato rounds, until cooked through and desired doneness is reached.

Serve with fried eggs, if desired.
