Gluten Free Grilled Chicken Mediterranean Salad

Yield: 4 servings

Ingredients

2 cups Wild Harvest Gluten Free Fusilli

1/2 pound boneless, skinless chicken breast

1/2 cup Wild Harvest Organic Extra Virgin Olive Oil

3 tablespoons red wine vinegar

2 tablespoons Wild Harvest Organic Dijon Mustard

2 cups Wild Harvest Organic Baby Kale, chopped

1 cup Wild Harvest Garbanzo Beans, rinsed and drained

1 cup Wild Harvest Grape Tomatoes, cut in half

1 cup cucumber, diced

1/2 cup crumbled reduced fat feta cheese

1/2 cup Wild Harvest Organic Kalamata Olives, cut in half

1/4 cup Wild Harvest Organic Red Onion, diced

Directions:

Prepare pasta according to package directions; rinse with cold water. Set aside.

Prepare grill to medium-high heat; salt and pepper chicken. Place chicken on grill; grill, turning once, 10-12 minutes or until internal temperature reaches 170 degrees F on an instant read food thermometer. Cool and chop.

Meanwhile, in small bowl, whisk together oil, vinegar and mustard; salt and pepper to taste. Set aside.

In large bowl, combine pasta, chopped chicken, kale, beans, tomatoes, cucumbers, cheese, olives and onion. Toss with dressing. Serve immediately.
