Red Skin Garlic Mashed Potatoes

Ingredients

3 pounds Wild Harvest Organic Baby Red Potatoes skin-on, quartered

15 cloves garlic, peeled

1 container (32 ounce) Wild Harvest Organic Low Sodium Chicken Broth

3/4 cup Wild Harvest Organic Original Soy Milk, warmed

1/4 cup Wild Harvest Organic Butter, melted

Add To

Directions:

Place potatoes, garlic and chicken broth in large saucepan. Add enough water to cover potatoes.

Bring to a boil over high heat; reduce heat and simmer until potatoes are tender (about 20 minutes). Drain.

Add milk and butter; mash to desired consistency. Salt and pepper to taste.
