Smoked Turkey And Strawberry Salad

Yield: 4 servings

Ingredients

Dressing:

1/2 cup Smucker's Strawberry Jelly

2 tablespoons red wine vinegar

2 teaspoons lemon peel, grated

Salad:

4 cups baby spinach

2 cups deli smoked turkey breast, cubed

1-1/2 cups fresh strawberries, sliced

1 can (11 oz.) mandarin oranges, chilled and drained

2 slices red onion, thinly sliced, separated into rings

Directions:

Dressing:

In small saucepan, combine jelly, vinegar and lemon peel. Cook over medium high heat until jelly is melted, stirring frequently. Cool 10 minutes.

Salad:

Arrange spinach, turkey, strawberries, oranges and onions on 4 salad plates; serve with dressing.
