2 slices eggplant, grilled

2 slices provolone cheese

Salt to taste

Pepper to taste

Directions:

On bottom half of bun, layer greens, eggplant and cheese; sprinkle with salt and pepper. Spread mayonnaise on top half of bun; top sandwich with bun.
