Lemon Mint Asparagus For Two

Ingredients

1 tablespoon butter, melted

1/4 teaspoon dried mint

1/4 teaspoon lemon zest

1/8 teaspoon lemon juice

1/8 teaspoon pepper

pinch salt

1/2 pound fresh asparagus, trimmed

cooking spray

Directions:

Combine melted butter, mint, lemon zest, lemon juice, pepper and salt; set aside.

Turn broiler on HIGH. Place asparagus on a baking sheet and cover with cooking spray.

Arrange asparagus in a single layer and broil for 4 minutes.

Shake sheet a couple more times for 3 - 4 more minutes until asparagus is lightly charred.

Brush butter mixture over asparagus and serve immediately.
