Shrimp and Citrus Spinach Salad

Yield: 2 servings

Ingredients

1 package (10 ounce) baby spinach

2 cups cooked shrimp

1 navel orange, peeled, sectioned and cut into 1- inch pieces

1 red grapefruit, peeled, sectioned and cut into 1- inch pieces

1 cucumber, very thinly sliced

1 avocado, peeled and thinly sliced

Prepared poppy seed salad dressing to taste

Add To

Directions:

Place baby spinach in a large bowl.

Toss shrimp, orange, grapefruit, cucumber and avocado with spinach.

Add dressing; toss to coat. Serve at once.
