Chicken Meatball Appetizers

Yield: 2-1/2 dozen

Ingredients

2-1/2 cups boneless, skinless chicken breasts, cooked and minced

3 tablespoons onion, finely chopped

3 tablespoons celery, finely chopped

2 tablespoons carrot, finely chopped

2 tablespoons dry bread crumbs, finely chopped

1 egg white

1/2 teaspoon poultry seasoning

pinch pepper

Add To

Directions:

In a bowl, combine all ingredients; mix well. Shape into 3/4 inch balls; place on a baking sheet that has been coated with nonstick cooking spray. Bake at 400 degrees for 8-10 minutes or until lightly browned.
