Ingredients

2 fresh peaches, peeled, pitted and sliced or 1 can (15 ounce) sliced peaches*

1/3 cup brown sugar

2 Tablespoons all purpose flour

1/8 teaspoon salt

1/8 teaspoon cinnamon

1 Tablespoon lemon juice

1/8 cup water

Topping:

3/4 cup all purpose flour

3 Tablespoons granulated sugar

1 1/2 teaspoons baking powder

1/4 teaspoon salt

3 Tablespoons cold unsalted butter

6 teaspoons milk

Directions:

Preheat oven to 425 degrees F

Place peaches in an ungreased 1- quart baking dish.

In a small bowl, combine brown sugar, flour, salt and cinnamon. Stir in lemon juice and water. Pour over the peaches.

Bake for 10 minutes or until hot.

While the peaches are baking, prepare the topping. Combine flour, sugar, baking powder, salt and butter; cut with fork or pastry blender until crumbly. Stir in milk just until moistened. Drop by spoonfuls over hot peaches.

Bake for 20 to 25 minutes or until golden brown.

*If using canned peaches, drain peaches and reserve the juice. Omit the 1/8 cup of water and use the reserved juice.
