Grilled Herb Corn

Yield: Serves 6 to 8

Preparation Time: 10 min; Cook: 20 min

Ingredients

1/2 cup butter, softened

5 tablespoons fresh Italian parsley, minced - divided

3 tablespoons green onion, finely chopped (optional)

1 teaspoon fresh tarragon, minced or 1/2 teaspoon dried tarragon, crushed

salt and pepper to taste

6-8 ears corn, husks and silk removed, trimmed

Directions:

In small bowl, blend butter, 3 tablespoons parsley, green onion (optional) and tarragon; add salt and pepper to taste.

Spread each ear of corn liberally with mixture and wrap individually in heavy duty foil.

Grill over coals for 15 to 20 minutes or until tender, turning occasionally.

Carefully unwrap, sprinkle with remaining parsley and serve.
