Pork and Noodle Stir Fry

Ingredients

1 lb. pork tenderloin, cut into stir-fry strips

1 teaspoon vegetable oil

1 pkg. (16 oz.) frozen oriental vegetable combination

2 pkgs. (3 1/2 oz.) ramen noodles, broken into pieces*

1 1/2 cups water

3 tablespoons soy sauce

3 tablespoons dark oriental sesame oil

1 tablespoon toasted sesame seeds, if desired

Directions:

Heat oil over medium-high heat in large nonstick skillet. Add pork; stir-fry about 5 minutes or until pork is lightly browned. Add remaining ingredients except sesame seeds. Heat to boiling. Reduce heat. Simmer 4-5 minutes, stirring occasionally, until noodles are completely softened and vegetables are crisp-tender.

Sprinkle with sesame seeds, if desired, before serving.

*Save seasoning packets from noodles for another use or discard.
