Sweet and Spicy Glazed Ham

fresh pineapple - cut into small bites to measure 1 cup. Slice the remainder into 1/4 inch rings.

finely chopped fresh jalapeno pepper

fresh chopped cilantro

12- to 16- pound bone-in or boneless ham

Directions:
In a small bowl, mix pineapple bites, jalapeno pepper and cilantro (makes about 1-2 cups cup glaze). Set aside and refrigerate the sliced pineapple to serve later on.
Place ham, fat side up in a roasting pan. Brush with half of the glaze and roast for 15 minutes per pound or until internal temperature registers 140 degrees. Brush occasionally with remaining glaze during roasting.
Serve ham on a platter surrounded by fresh pineapple rounds.
