Tempting Tuscan Dip

Yield: 12 servings

Ingredients

1 can (15 ounce) cannellini or other white beans, drained

2 cloves prepared minced garlic

1 (1/2 cup) medium onion, chopped

1/2 cup chopped roasted red pepper

1/4 cup chopped Italian parsley

1 Tablespoon Italian salad dressing

1 cup (4 ounces) shredded mozzarella cheese

2 Tablespoons grated Parmesan cheese

Toasted baguette slices, breadsticks or crackers

Directions:

Heat oven to 350 degrees F

Place beans and garlic in a food processor; blend until smooth. Spread in an oven-proof 9- inch pie plate.

Combine onion, roasted red pepper, Italian parsley, and Italian salad dressing; spoon over bean layer.

Top with mozzarella and Parmesan cheese.

Bake for 10 to 15 minutes or until heated through and cheese melts.

Serve with toasted baguette slices, breadsticks or crackers.
