Mock Ham Salad Sandwich

Yield: 8-10 servings

Ingredients

1 lb. chunk bologna, ground

2 hard cooked eggs, finely chopped

1/2 small onion, finely chopped

1/3 cup sweet pickles, finely chopped

1/2 cup mayonnaise

8-10 sandwich buns

Directions:

In a mixing bowl, combine bologna, eggs, onion and pickles. Add mayonnaise; toss to mix. Refrigerate, covered, to blend flavors. Spread equally on buns and serve immediately.
