2 tablespoons sweet pickle relish

1 whole scallion, thinly sliced

1/4 cup fat-free mayonnaise

1 teaspoon brown mustard or mustard of choice

1/8 teaspoon salt ( optional )

1/8 teaspoon freshly ground pepper

2 large Quaker Plain Rice Cakes
