Elegant Puffed Broccoli

Yield: Makes 6-8 servings

Ingredients

2 bunches broccoli, cut into spears or 2 10-oz. packages frozen broccoli spears, cooked,

2 egg whites, at room temperature

1/4 teaspoon salt

1/2 cup shredded Swiss cheese (2 oz.)

1/2 cup Hellmann's Best Foods Real Mayonnaise

Directions:

Arrange hot cooked broccoli in shallow 1 1/2-quart pan or broiler proof serving dish. In small bowl with mixer at high speed beat egg whites and salt until stiff peaks form. Fold in cheese and mayonnaise; spoon evenly over broccoli. Broil 6 inches from source of heat 4 minutes or until golden brown. Serve immediately.
