Berries On Cantaloupe Rings

Yield: 4 servings

Ingredients

2 Tablespoons orange juice concentrate, undiluted

1 Tablespoon water

1 quart fresh strawberries, hulled and sliced

1 cup fresh blueberries

1 teaspoon orange peel, grated

3/4 cup heavy whipping cream

2 t=Tablespoons granulated sugar

1/2 cup sour cream

4 cantaloupe rings

Directions:

In a bowl, combine orange juice concentrate and water. Add strawberries, blueberries and orange peel; toss gently to coat; set aside.

In a small mixing bowl, whip cream and sugar until stiff peaks form. Fold in sour cream.

To serve, spoon fruit mixture into cantaloupe rings; spoon sauce over berries.
