Simple Strawberry Cheesecake

Ingredients

1 cup finely ground Essential Everyday Low Fat Honey Graham Crackers

3/4 cup Essential Everyday Granulated Sugar, divided

1/4 cup Essential Everyday Butter, melted

2 packages (8 ounces each) Essential Everyday Neufchatel Cheese, softened

1 container (8 ounce) Essential Everyday Frozen Lite Whipped Topping, thawed

1/4 cup Essential Everyday Strawberry Preserves

1 container (16 ounce) fresh strawberries, sliced

Directions:

In medium mixing bowl, combine finely ground crackers, 1/4 cup sugar and melted butter; mix until well combined. Press into a 9-inch pie plate. Bake in a preheated 375 degree F oven 6-8 minutes. Cool.

Meanwhile, in large mixing bowl, combine Neufchatel and remaining 1/2 cup sugar. Using an electric mixer, beat on medium speed until smooth. Add whipped topping and continue mixing until light and fluffy.

Add preserves; mix on low until just swirled into mixture. Transfer to cool pie crust. Refrigerated until set (2-3 hours). Top with sliced strawberries just before serving. Serve with whipped cream, if desired.
