Easy Homemade Breakfast Skillet

Ingredients:
For each person to be served (make all portions at once):

1 Serving (2/3 to 3/4 cup) diced frozen potatoes or O'Brien potatoes (60-70 calories)
1/2 Serving (1 link) frozen pre-cooked sausage links (about 85 calories) slightly thawed and sliced into small rounds
1 Large egg, lightly mixed (about 100 calories)
Diced onions to taste, fresh or canned sliced mushrooms to taste,diced bell pepper to taste (all optional)
Dice 1/2 slice processed cheese or 1/2 ounce shredded cheese by weight (1/4 cup) per serving (about 40 calories) (optional)
Salt and pepper to taste

Directions:

Spray non-stick pan with cooking spray, heat to medium heat. Saute onions and peppers lightly (if used), add potatoes, mushrooms, and sausage and cook until potatoes are browned and cooked through. Push to side of pan, add egg, scramble until done to taste. Mix all ingredients. Mix in cheese as desired. About 295 calories per serving. Season with salt and pepper as desired. Serve with vegetable juice as desired.
