General Tso's Chicken

Prep Time: 10 minutes
Cook Time: 15-20 minutes

Ingredients:
3 pounds boneless, skinless chicken breasts cut into chunks
Assorted veggies (broccoli, sweet and hot peppers, & snow peas are my favorites)
1/4 cup soy sauce
2 eggs, beaten
1 cup cornstarch
A bottle of store bought General Tso's Sauce

Directions:

1.Mix cornstarch slurry in a large bowl.

2.Add chicken pieces to coat.

3.Using a fork remove ONE chicken piece at a time and let the excess mixture drip off.

4. Add chicken to the hot (350 degree) oil and fry until crispy.(Only cook 7 or 8 chicken pieces at a time.)

5. Drain on paper towels. Keep warm- I just put them in the oven with the oven off. Repeating until all chicken is fried.

6.After all the chicken is fried, drain the the old oil from the wok or skillet and then put all the chicken back into skillet with veggies, sauce and rice is desired.

7. Stir and fry everything together until everything is cooked and coated in sauce (about 5 mins)

8. SERVE UP WITH WHITE RICE!
