Directions:
Preheat oven to 350. In a large skillet, het the oil over medium heat. Add theonion, bell pepper, garlic, oregano, and thyme and cook over medium-high heat, stirring frequently, for 5 minutes, or until the vegetables begin to soften. Stir in the salt, cayenne, black pepper. Remove the skillet from heat.
In a large bowl, combine the beef, pork, and veal. Add the bread crumbs, tomato sauce, egg and milk and blend well. Gently mix in the vegetable mixture. Pack into a 9 by 5 by 3 inch loaf pan and smooth the top. Bake for one hour, or until the meat loaf is firm when pressed gently and the juices run clear when center is pierced with a knife. Pour off most of the juices, cut the meat loaf into slices, and serve
This spicy meatloaf is terrific with a vegetable dish. If you prefer a little less spice, reduce the cayenne to 1/2 or 1/4 teaspoon.
