Directions:
1. Heat oil in a nonstick frying pan. Beat the eggs lightly and blend with onion, tomato, jalapeno, turmeric, cumin, salt, and cilantro.
2. Pour mixture into frying pan and cook over medium heat for 3-4 minutes. Once base is lightly browned add pepperjack cheese and fold omelet in half with spatula. Cook for another 2-3 minutes on each side.
3. Remove from heat and serve with crusty toast and hot coffee.
