Spicy masala omelet

2 large eggs lightly beaten, 1 tsp olive oil, 1/2 small red onion diced, 1 plum tomato diced, 1 jalapeno thinly sliced, pinch of turmeric, 1/2 teaspoon cumin, 2 tbsp chopped cilantro, 1/2 tsp salt, 2 slices pepperjack cheese
1. Heat oil in a nonstick frying pan. Beat the eggs lightly and blend with onion, tomato, jalapeno, turmeric, cumin, salt, and cilantro.
2. Pour mixture into frying pan and cook over medium heat for 3-4 minutes. Once base is lightly browned add pepperjack cheese and fold omelet in half with spatula. Cook for another 2-3 minutes on each side.
3. Remove from heat and serve with crusty toast and hot coffee.
