Rhode Island Clam Cakes

Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients:
2 Eggs, lightly beaten
1 Cup clams, drained and chopped
1/8 Teaspoon freshly ground black pepper
1 Teaspoon salt
1 Cup milk
2 Cups flour
2 Teaspoons baking powder
Fat or oil for deep-frying

Directions:

Combine the eggs, clams, salt, pepper, milk, flour, and baking powder. Form into small cakes and fry, a few at a time, in a frying pan or in a basket in fat or oil, heated to 360 F. Drain on paper towels.
