Garbage Salsa

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients:
1 Can shoepeg corn
1 Can black eyed peas
1 Can black beans
1 Small jar pimentos
1 Small jar jalapenos, chopped
1 Cup chopped celery
1 Medium red onion, diced
1 Cup sugar
1 Cup olive oil
1/2 Cup apple cider vinegar

Directions:

1. Drain and rinse well all canned and jarred vegetables. Mix with celery and onion.
2. In a small pot on stove, combine sugar, olive oil and vinegar. Simmer until the sugar is dissolved.
3. Combine with vegetables and mix well.
4. Put in a plastic or glass container with lid overnight. Drain before serving.
5. Serve with Tostitos or Fritos Scoops.

Unique and healthy summer salsa for dipping.
